ReplyDeleteKai pai on the awesome idea of using the same colours as the Edmonds cookbook pages, this means you critically thinking about the task! I love meringues too! Although I don’t get to have them all the time because they are a treat, they make me so happy when I do get to have them. My Grandma used to bake them for my family, so I have memories of her when eating them.
Making the soft peaks is the most important process! If they aren’t super fluffy they tend to not form properly. We test out out soft peaks by flipping the bowl upside down, if it drops they aren’t ready although can be a bit risky if they aren’t ready haha.
